Another successful day has come and gone for Richard (The Meat).
For dinner he enjoyed Spicy Seafood Cloppino with pasta:
- One small package of seafood medley
- 2pcs finely chopped fresh garlic
- Finely sliced carrots
- Finely Sliced Mushrooms
- Finely Sliced Peppers
- Finely Sliced Red Peppers
- Finely Sliced Jalapeno Pepper
- Snow Peas
- 236ml of clam juice
- 1 small can of tomato sauce
- Fresh basil
- Italian spices to taste
- Parmigiana Cheese
- 1/2 cup pasta
Cook the vegetables in a deep cooking pan with a tablespoon of olive oil, on 3/4 heat for 3-5 minutes, add clam juice and tomato sauce.
Bring to a light boil for 10 minutes, add fresh basil parmigiana cheese. Serve over pasta.
On the side Richard also enjoyed 1/3 cup of quinoa and 1 cup of milk.
What a delicious, low calorie meal!
